Vibrant Buffalo Sauce Salad

Welcome back to my virtual cook book! Today, I'm excited to share with you a vibrant and flavorful salad that's sure to become a favorite in your household. This Creamy Buffalo Sauce Salad combines crisp vegetables, tangy buffalo sauce, and creamy dressing for a deliciously satisfying meal. Makes 2 Large Servings
Ingredients:
1 large head of romaine lettuce
1/2 cup pickled or regular red onions
1 medium-sized bell pepper
3/4 cup shredded carrots
1 avocado
1/4 cup crumbled goat cheese
Salt and pepper, to taste (start light and adjust to your preference)
3 tablespoons olive oil
Juice of 1/2 lemon
1/4 cup Primal Kitchen Buffalo Sauce
1/4 cup non-fat plain Greek yogurt
Instructions:
Prepare the Salad Ingredients:
Wash and chop the romaine lettuce into bite-sized pieces.
Chop the pickled or regular red onions into small pieces.
Dice the bell pepper into small pieces.
Peel and dice the avocado.
Crumble the goat cheese.
Place all prepared vegetables and goat cheese into a large salad bowl. Make the Creamy Buffalo Sauce Dressing:
In a small bowl, whisk together olive oil, lemon juice, Primal Kitchen Buffalo Sauce, and non-fat plain Greek yogurt until well combined and creamy. Combine and Toss:
Pour the creamy buffalo sauce dressing over the salad ingredients.
Season with salt and pepper to taste.
Gently toss the salad until all ingredients are evenly coated with the dressing. Optional Protein Addition:
For added protein, consider adding pan-seared tofu, tempeh, chicken, or canned and rinsed garbanzo beans to the salad. I added baked chicken thighs to mine! Serve and Enjoy:
Serve immediately and enjoy the delicious combination of flavors and textures!
